Papaya
supplies hefty doses of vitamin A and enzymes to aid morning digestion.
- 1 large papaya (Mexican or Solo, about 1 pound), peeled, halved lengthwise, seeds removed, cut into ½-inch dice
- 1 cup ice cubes
- ⅔ cup plain low-fat yogurt
- 1 tablespoon finely chopped peeled fresh ginger
- 1 tablespoon honey
- Juice of 2 lemons
- 16 fresh mint leaves, plus 4 sprigs for garnish
Puree first
6 ingredients in a blender. Thin with water as necessary. Blend in mint leaves.
Divide among four glasses. Garnish with mint sprigs; serve.
